10 Easy Camping Meals With Baked Potatoes

Baked Potato RecipesLet’s face it…camping meals need to be easy to make, easy to eat and easy to clean up. Did you know that potatoes just happen to be a great way to get all of those things and still have plenty of room for flavor? So here’s some great ideas on how to satisfy your whole family on your camping trip using many potatoes…and a few other things as well.

1. Po’ Boy Foil Bowl
Chop up 1 small potato per camper, depending on their appetite. Put the chopped potatoes in a clean, plastic bag, add a splash of olive oil, pepper, salt and whatever dried herbs you have. Add a couple of hand fulls of chopped vegetables like: carrots, celery, onion, tomato, broccoli, etc. and shake the bag. Dish out about a cup of the mixture onto sheets of aluminum foil. Wrap the ingredients tightly, leaving a small opening at top and grill over open flame or in the coals of a fire, for up to 30 minutes. Use tongs to check the packages regularly–if they steam when you open them, your po’ boy is ready! Serve straight from aluminum!

2. Baked Potato Burrito
One baked potato per camper. Leave the skin on and cut the potato in half, long ways. Scoop a chunk from each half and place scooped potato in plastic bag. Add lots of salt, pepper, seasonings and a can of drained, black beans. Mush the bag until thoroughly mixed. Place potato halves onto aluminum foil sheets, scoop potato/bean mixture onto the halves and top with other half of potato. Gently wrap in foil and, turning gently and regularly, cook the potatoes over open flame or in the coals of a fire. Be careful when opening and eat with a spoon!

The Secret Of The Camping Lunch!

Camping Lunch TimeYou know you’ve got breakfast and dinners all planned as the big meals of the day. You fire up the stove in the morning with eggs, bacon and pancakes. And in the evening, do something special on the grill or Dutch Oven. But what about lunch? You don’t want to mess with the stove and want something light and easy. After all everyone’s off having fun and just want a quick bite to eat. A reader sent me a couple of quick and easy lunch recipes that I think are winners. Easy to make and no mess to clean up! ;-)

Sliced Turkey Wrappers

1 wheat tortilla for each camper
2 slices of pre-packed turkey per camper
2 slices pepper jack cheese per camper
1 head lettuce
1 squeeze bottle
1-2 cups mayo, depending on taste
1/2 cup mustard
pepper
onion powder

Quick Camping Meals In 5 Minutes

Easy Camping FoodThe Camping Guy brings you great recipes for your camping needs. From breakfast to dessert, these are quick and convenient ways to eat while camping out – for the non-cookers. For the quick and convenient crowd that don’t want to mess around, I suggest:

  • Breakfast - For a quick breakfast when you are unable to cook try granola and vanilla yogurt and with ripe pears and raisins is a great way to start your day. If you prefer something more traditional but still can’t cook, chop up some pearl onions, tomatoes, cooked chicken or turkey and toss them into a tortilla with some seasoning and pepper. Add other fresh vegetables, cheese or cream to suit your taste!
  • Lunch - is always a great meal for easy camping since it requires no cooking. Sandwiches are always the obvious choice but those sandwiches can be fresh and seasonal with these great topping ideas: hummus, sprouts, squash, avocado, tomato, basil, and carrot – for the vegans and cold cuts for the rest of us. If sandwiches aren’t appealing, salads are another great way to go. For a fun, seasonal salad topping, try almonds, cashews or pistachios. One of the Scout Masters would always make a “garbage salad” when we went camping. He’d cut up all the salad fixings and put them in a green garbage bag, add nuts and pour in half a bottle of salad dressing and shake. Tasted great!

Easy Camping Recipes

Campfire MealDo you know the best part of camping?…..the food! I happen to believe that food tastes a whole lot better when you’re outside cooking up a camping meal. But, nobody wants to break-up the fun to go and cook a meal….groan! So, here’s a couple of easy camping meals that you can prepare that are tasty and most of all, a snap to make and cleanup.

Don’t let the name of this first one throw you, it’s very good!

Camp Hash

2 TB cooking oil
1 large onion — chopped
2 garlic cloves — minced
4 large potatoes — peeled and cubed
1 lb smoked sausage — cubed
1 can chopped green chiles — (4 oz)
1 can whole kernel corn - drained

In a Dutch oven, or large cooking pot heat oil. Saute onion and garlic until tender. (I can smell the aroma as I’m writing this!) Add potatoes. Cook, uncovered, over medium heat for 20 mins. stirring occasionally. Add sausage, cook and stir until potatoes are tender and well browned, about 10 mins. more. Stir in chilies and corn; cook until heated through and serve out of the pot.
Bonus: Leftovers can be put in your breakfast omelet.

I love how the sour cream gives this dish a distinctive taste!

Simple Stroganoff

2 tsp butter or margarine
1/4-cup water
1 can cream of mushroom soup
1/2-cup sour cream
1/2-cup onion- chopped
1 lb Round steak - cut
1/2 tsp Paprika

Melt butter or margarine in a skillet. Brown the strips of round steak. Add onions and brown. Stir in soup, water, sour cream and paprika. Cover and cook over low heat about 45 minutes, or until meat is tender. Stir frequently. Serve over hot, wide egg noodles or rice.

Simple, easy and good eating. And, the Cleanup is confined to one pot. Try these out this weekend and let me know what you think. Or, if you have a great camping recipe you want to share with all of us put it in the comments section.

Food Safety While Camping

Camping Food!The best part of camping is the food….right? I enjoy cooking some of my favorite dishes and especially trying a new recipe in my Dutch Oven. But, getting the food to camp and making sure it stays fresh without any hassles or ill affects can be a challenge that can easily be remedied if you keep a few things in mind.

While transporting the food consider this:

  • Keep cold food cold, at or below 40°F. Make up a cooler with ice or frozen gel packs, just for food and one just for drinks. This way every time you reach for a drink you aren’t going to affect the meat you have packed for dinner.
  • If possible, pack meat, poultry, and seafood while it’s still frozen so that it stays cold longer. Always keep raw meat, poultry, and seafood separately wrapped (I prefer ziplock bags) so their juices don’t contaminate cooked foods or other foods in the cooler, such as fruits and vegetables.
  • Keep the food cooler in the air conditioned passenger compartment of your car, not in the hot trunk. And try to reduce the number of times you open the cooler.

Once at the campsite and you’re getting ready to prepare one of your delicious meals…remember:

  • Wash your hands! Ya..I know, I sound like your Mom. But I know how difficult it can be to get some water, soap and wash your hands when your camping. Have someone pour the water jug over you hands, use some soap and towel off. If water is at a premium you can use anti-bacterial hand wipes. :-)
  • While “prepping” the food, keep all utensils and platters clean. All the things you would normally do at home…right? I know! I even forget sometimes in a camping setting.

If you’re grilling, here’s a few more things to consider:

  • I like to marinate and will put the meat in ziplock bags with the marinate right into the cooler. Any marinate I want to use as a sauce I put in another separate bag.
  • When grilling make sure everything is cooked. Sometimes when I grill over a fire, not a BBQ, I have to watch that some of the food doesn’t get under-cooked because the fire is not burning evenly.

Above all, enjoy your food. There’s something that happens to food when you cook it outdoors at a campout. It just seems to bring out all the natural flavors. I can taste them now, can you?

Dutch Oven Cook-off Winner!

Just got back from our annual Boy Scout Camporee, where 40 patrols competed for prizes. One of our patrols won the Dutch Oven Cook-off with an unusual recipe. I think the judges usually expect something like peach cobbler or cake, but this year they got a surprise with Pepsi Chicken. At first, it doesn’t sound very appetizing, but it sure smelt good while it was cooking. Here’s the recipe for you to try:

Pepsi Chicken
Take a 2 liter bottle of Pepsi, 10-14 chicken legs and 2 bottles of BBQ sauce. Put all the chicken in the Dutch Oven, pour on the BBQ sauce and add the Pepsi so that the chicken is almost completely covered. Put the lid on and set the Dutch Oven on about 8 hot coals and cover lid with 16 more hot coals. That will give you about 360º F. (Remember the rule of thumb is 15º F per coal). Cook 20-30 minutes. Check to see if the legs are done by poking them with a fork.

Cook rice or other vegetables on the side to serve with the chicken and you have a tasty outdoor meal!

The trick is, the sugar in the Pepsi caramelizes the chicken and keeps it from burning. So, don’t use Diet Pepsi!

Campfire Treats

A number of campers have written me to ask about what campfire treats I like best. Well, here’s a few that I like, that you may want to try.

Everybody has heard of Smores, right? This is a classic campfire treat made with marshmallows, Hersheys milk chocolate and Graham crackers. Toast two marshmallows to your liking and put them between two Graham crackers and a piece of chocolate. It’s no small wonder why Smores are always a hit.

BUT, how about…SMORES WITH A TWIST!!

Use chocolate chip cookies or peanut chip cookies instead of Graham crackers and chocolate. Next time you’re camping, try it and let me know what you think!

Chocolate Bananas
This next one we used at Scout-o-Rama where we invite the public to see what Scouting has to offer, and we had people lined up to taste these. Take a strip of tin foil about 12 inches long, cut a whole banana lengthways, then stuff it with chocolate, or caramel or Rolos (chocolate/caramel chucks). Squeeze the banana back together and wrap it tightly in foil. Put the foil-wrapped banana on a fire or on BBQ coals for about 3-5 minutes. Take if off the coals, open it up and dig out the gooey, chocolatey insides with a fork or spoon. CAUTION: It’s Hot! Use tongs to pull it out of the coals and to peel back the foil.
